“Coya” means Queen in Quechua, the ancestral language of the Andes. More than a name, it is a symbol of leadership, care, and celebration.

Casa Coya was born as a tribute to the women who have sustained our traditions through cooking turning every meal into an act of unity and memory. Our concept honors that heritage through a contemporary lens, where technique, product, and hospitality meet in balance.

Based in Atlanta, we envision Casa Coya as a house of gathering: a space where Peruvian cuisine is elevated with precision, and every visit feels like a special occasion.

A Vision Built as a Family

Joseph and Paul Rosales have shaped their path within Atlanta’s culinary scene from the heart of the family business.

Paul Rosales developed his culinary training alongside his father, becoming the lead chef and refining both technique and the sensibility behind every dish.

Joseph Rosales found his calling in hospitality. As bar manager, he specialized in service, guest experience, and creating memorable moments.

Both are founders of Pisco Latin Kitchen, a project that reflects their passion for Latin cuisine and identity-driven mixology.

Casa Coya represents the natural evolution of that journey: an elevated Latin cuisine concept that blends family tradition, professionalism, and a clear vision of excellence.

Renzo Kuong Arrayán

Executive Chef

Trained at Le Cordon Bleu Lima and with experience in internationally recognized kitchens, Executive Chef Renzo Kuong Arrayán leads Casa Coya’s culinary vision.
